Why this works

Ingredients
- 2 tbsp olive oil
- 1 onion, 1 leek, and 4 garlic cloves, all sliced
- 2 carrots and 2 celery stalks, diced
- 1 can (15 oz) white beans, drained
- 1 can (15 oz) chickpeas, drained
- 1 cup green lentils, rinsed
- 8 cups low sodium vegetable broth
- 1 bunch kale, stems removed and torn
- 1 tsp turmeric, 1 tsp cumin, 1 bay leaf
- Juice of 1 lemon
Method
- 1Warm the oil and soften the onion, leek, carrot, and celery for 8 minutes.
- 2Add the garlic and spices and cook 1 minute until fragrant.
- 3Add the lentils, beans, chickpeas, bay leaf, and broth. Simmer 25 minutes.
- 4Stir in the kale and cook 5 more minutes.
- 5Finish with lemon juice, taste for salt, and remove the bay leaf.
