Why this works

Onions, leeks, and garlic deliver prebiotic inulin; beans feed short-chain fatty acid production in the colon.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, 1 leek, and 4 garlic cloves, all sliced
  • 2 carrots and 2 celery stalks, diced
  • 1 can (15 oz) white beans, drained
  • 1 can (15 oz) chickpeas, drained
  • 1 cup green lentils, rinsed
  • 8 cups low sodium vegetable broth
  • 1 bunch kale, stems removed and torn
  • 1 tsp turmeric, 1 tsp cumin, 1 bay leaf
  • Juice of 1 lemon

Method

  1. 1Warm the oil and soften the onion, leek, carrot, and celery for 8 minutes.
  2. 2Add the garlic and spices and cook 1 minute until fragrant.
  3. 3Add the lentils, beans, chickpeas, bay leaf, and broth. Simmer 25 minutes.
  4. 4Stir in the kale and cook 5 more minutes.
  5. 5Finish with lemon juice, taste for salt, and remove the bay leaf.
