Why this works
Blending fiber and protein alongside fruit meaningfully lowers the post-drink glucose spike.
Ingredients
- 1 cup unsweetened kefir or milk
- 2 large handfuls spinach
- 1/2 frozen banana
- 1/2 cup frozen mango
- 1 tbsp chia seeds, 1 tbsp ground flax
- 1 scoop unflavored or vanilla protein powder
- 1 tbsp almond butter
Method
- 1Blend the kefir and spinach first until completely smooth.
- 2Add the seeds, protein, and nut butter and blend again.
- 3Add the frozen fruit last and blend to a thick, spoonable texture.
Yvette's tip
Freeze spinach in portioned bags, it blends smoother and never goes slimy in the drawer.
