Why this works

Ingredients

  • 2 cups cooked quinoa
  • 1 can (15 oz) chickpeas, roasted with cumin
  • 2 cups shredded red cabbage
  • 2 cups baby spinach
  • 1 cup grated carrot
  • 1 cup roasted sweet potato cubes
  • 1/2 cup pumpkin seeds
  • Tahini lemon dressing (1/4 cup tahini, juice of 1 lemon, water to thin)

Method

  1. 1Pour 2 tbsp dressing into the bottom of each jar.
  2. 2Layer the firm ingredients first: chickpeas, sweet potato, quinoa.
  3. 3Add cabbage and carrot, then pack the spinach on top so it stays dry.
  4. 4Seal and refrigerate up to four days. Shake into a bowl to serve.

Yvette's tip

Keep the seeds in a small bag and add at the last second so they stay crunchy.
