Why this works

Ingredients

  • 2 cans (5 oz) tuna in olive oil, drained
  • 1 can (15 oz) cannellini beans, rinsed
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup parsley, chopped
  • 3 tbsp olive oil, 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard

Method

  1. 1Soak the sliced onion in cold water for 5 minutes to soften its bite, then drain.
  2. 2Whisk the oil, vinegar, and Dijon with salt and pepper.
  3. 3Fold together the tuna, beans, vegetables, and parsley.
  4. 4Dress, toss gently, and rest 5 minutes before serving.
