Lentil Walnut Bolognese

Why this works

Most women eat half the fiber they need. One bowl of this closes a third of the daily gap.

Ingredients

  • 1 cup brown lentils, rinsed
  • 1 cup walnuts, finely chopped
  • 1 onion, 2 carrots, 2 celery stalks, finely diced
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 2 cups broth
  • 1 tsp oregano, 1 bay leaf
  • 3 tbsp olive oil

Method

  1. 1Soften the diced vegetables in the oil for 10 minutes.
  2. 2Add the garlic, oregano, and tomato paste; cook 2 minutes.
  3. 3Add the lentils, walnuts, tomatoes, broth, and bay leaf.
  4. 4Simmer 25 to 30 minutes until the lentils are tender and the sauce is thick.
  5. 5Season generously and serve over whole grain pasta or roasted squash.

Yvette's tip

Toast the walnuts first, it is 5 minutes for twice the depth.
