Why this works

Ingredients

  • 4 salmon fillets (5 oz each), skin on
  • 1 lb carrots and parsnips, cut into batons
  • 1 red onion, cut into wedges
  • 1 can (15 oz) lentils, drained and rinsed
  • 3 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 3/4 cup plain Greek yogurt
  • 1/2 cup chopped dill and parsley
  • 1 lemon, half juiced and half in wedges
  • Sea salt and black pepper

Method

  1. 1Heat the oven to 425°F and line a large sheet pan.
  2. 2Toss carrots, parsnips, and onion with 2 tbsp olive oil, paprika, salt, and pepper. Roast 18 minutes.
  3. 3Push the vegetables to the edges, scatter the lentils in the center, and nestle the salmon on top. Brush the fish with the remaining oil and season.
  4. 4Roast 10 to 12 minutes, until the salmon flakes at the thickest point.
  5. 5Stir the yogurt with the herbs, lemon juice, and a pinch of salt.
  6. 6Spoon the herb yogurt over everything and serve with lemon wedges.
