Why this works
Cooled and reheated rice forms resistant starch, and kimchi brings live lactic acid bacteria.
Ingredients
- 2 cups cooked and cooled brown rice
- 1 cup kimchi, roughly chopped
- 2 eggs
- 1 block (7 oz) tempeh or 2 cups edamame
- 2 tsp sesame oil, 1 tbsp soy sauce
- 2 scallions, 1 sheet nori, sesame seeds
Method
- 1Crisp the tempeh or edamame in sesame oil for 5 minutes.
- 2Add the rice and soy sauce and fry 4 minutes without stirring too often.
- 3Stir in the kimchi at the end so its cultures survive.
- 4Fry the eggs and set on top with scallions, nori, and sesame.
