Dark Chocolate Tahini Bites

Ingredients
- 1 cup pitted Medjool dates, soaked 10 minutes
- 1 cup rolled oats
- 1/3 cup tahini
- 1/4 cup cocoa powder
- 2 tbsp ground flaxseed
- 1/3 cup chopped 70% dark chocolate
- Flaky salt
Method
- 1Pulse the drained dates and oats in a food processor to a coarse crumb.
- 2Add the tahini, cocoa, and flax and process until the mixture clumps.
- 3Pulse in the chopped chocolate briefly.
- 4Roll into 16 balls, press flaky salt on top, and chill 30 minutes.

They keep three weeks in the freezer and are better eaten half-frozen.
