Why this works

Olive oil, legumes, and vegetables in one bowl is the Mediterranean pattern in its simplest form.

Ingredients

  • 2 cans (15 oz) chickpeas, rinsed
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 cup Kalamata olives, halved
  • 6 oz feta, cubed
  • 1/4 cup olive oil, 2 tbsp red wine vinegar
  • 1 tsp dried oregano

Method

  1. 1Whisk the oil, vinegar, oregano, salt, and pepper in the bottom of a large bowl.
  2. 2Add the chickpeas and onion and let them marinate 5 minutes.
  3. 3Fold in the cucumber, tomatoes, and olives.
  4. 4Add the feta last and toss gently.
