Chickpea Greek Salad with Feta

Why this works
Olive oil, legumes, and vegetables in one bowl is the Mediterranean pattern in its simplest form.
Ingredients
- 2 cans (15 oz) chickpeas, rinsed
- 1 cucumber, diced
- 2 cups cherry tomatoes, halved
- 1/2 red onion, diced
- 1 cup Kalamata olives, halved
- 6 oz feta, cubed
- 1/4 cup olive oil, 2 tbsp red wine vinegar
- 1 tsp dried oregano
Method
- 1Whisk the oil, vinegar, oregano, salt, and pepper in the bottom of a large bowl.
- 2Add the chickpeas and onion and let them marinate 5 minutes.
- 3Fold in the cucumber, tomatoes, and olives.
- 4Add the feta last and toss gently.
