Walnut Crusted Cod with Greens

Why this works
Walnuts are the nut with the most plant-based omega-3, and they crisp beautifully over lean fish.
Ingredients
- 4 cod fillets (6 oz each)
- 3/4 cup walnuts, finely chopped
- 2 tbsp whole grain breadcrumbs
- 1 tbsp Dijon mustard
- 2 tbsp olive oil
- Zest of 1 lemon, 2 tbsp parsley
- 8 cups spinach or chard, wilted with garlic
Method
- 1Heat the oven to 425°F and line a tray.
- 2Mix the walnuts, breadcrumbs, lemon zest, parsley, and 1 tbsp oil.
- 3Pat the cod dry, brush with Dijon, and press the walnut mixture on firmly.
- 4Bake 12 to 14 minutes until opaque and the crust is golden.
- 5Wilt the greens in the remaining oil with garlic and serve underneath.
