Why this works

Ginger and turmeric both act on inflammatory pathways, and a one-pot format means you will actually make it.

Ingredients

  • 8 chicken thighs, bone in
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 2 tbsp grated ginger, 4 garlic cloves
  • 2 tsp turmeric, 1 tsp cumin, 1/2 tsp black pepper
  • 1.5 cups brown basmati rice
  • 3 cups broth
  • 1 cup frozen peas
  • Cilantro and yogurt to serve

Method

  1. 1Brown the seasoned chicken in the oil, skin down, 7 minutes. Set aside.
  2. 2Soften the onion, then add the garlic, ginger, and spices for 1 minute.
  3. 3Stir in the rice to coat, add the broth, and nestle the chicken back on top.
  4. 4Cover and simmer 35 minutes until the rice is tender.
  5. 5Scatter the peas over, rest covered 5 minutes, then serve with cilantro and yogurt.
