Kefir and Berries

Why this works

Kefir carries a far broader range of live microbial strains than most yogurts, and the polyphenols and fiber in berries give those microbes something to feed on once they arrive.

Ingredients

  • 1 cup plain live kefir
  • 3/4 cup mixed raspberries and blueberries
  • 1 tbsp ground flaxseed
  • Few mint leaves (optional)

Method

  1. 1Tip the berries into a bowl or a wide glass.
  2. 2Pour the kefir over the top so the berries float up through it.
  3. 3Sprinkle the ground flaxseed over the surface.
  4. 4Add mint and eat straight away, before the flax thickens it.

Yvette's tip

Frozen berries work perfectly here and cost a third as much, the kefir chills into a soft ice cream texture around them.
