Why this works
Ground flaxseed and whole soy foods both have evidence for supporting menopausal symptom load and cardiovascular health.
Ingredients
- 1.5 cups shelled edamame
- 1.5 cups cooked barley or farro
- 3 tbsp ground flaxseed
- 2 cups roasted broccoli
- 1 cup shredded carrot and red cabbage
- 1/4 cup tahini, juice of 1 lemon, 1 small garlic clove
- Pumpkin seeds and parsley
Method
- 1Whisk the tahini, lemon, grated garlic, and enough water to make a pourable sauce.
- 2Warm the grain and edamame together.
- 3Build the bowls with grain, edamame, broccoli, and raw vegetables.
- 4Sprinkle the flaxseed over the top and finish with sauce, seeds, and parsley.
