Why this works
Shifting the plate ratio toward protein and non-starchy vegetables is the simplest lever for perimenopausal glucose swings.
Ingredients
- 1.25 lb chicken, shrimp, or extra firm tofu
- 6 cups mixed vegetables (broccoli, snap peas, peppers, bok choy)
- 2 tbsp avocado oil
- 3 garlic cloves, 1 tbsp grated ginger
- 3 tbsp soy sauce or tamari
- 1 tbsp rice vinegar, 1 tsp toasted sesame oil
- 2 cups cooked quinoa or brown rice
- Cashews for topping
Method
- 1Get the pan very hot and sear the protein in batches. Set aside.
- 2Stir fry the hardest vegetables first, adding softer ones after 2 minutes.
- 3Add the garlic and ginger for 30 seconds.
- 4Return the protein, add the sauce, and toss 1 minute.
- 5Serve over a modest scoop of grain and top with cashews.
