Why this works

The apple's pectin fiber and the fat and protein in almond butter slow gastric emptying together, so a sweet snack lands as a gentle rise rather than a spike and crash.

Ingredients

  • 1 medium apple, skin on, sliced
  • 1 1/2 tbsp almond butter, no added sugar
  • Pinch of cinnamon
  • Pinch of flaky sea salt

Method

  1. 1Core and slice the apple into eight wedges, leaving the skin on for the fiber.
  2. 2Spoon the almond butter into a small dish rather than the jar lid.
  3. 3Dust the almond butter with cinnamon and a pinch of salt.
  4. 4Dip and eat, ideally away from your desk.

Choose a tart apple, Granny Smith or Braeburn. The acidity makes a modest amount of almond butter taste generous.
